I am also a shiny new vegetarian! Specifically a pescatarian (I'll only eat non-farm-raised fish). Being an avid cook for years, this was a very hard thing to do at first, but I could no longer stomach the conditions animals are kept in in order to provide nourishment. I will still gladly create anything for anyone, as my choice is mine and does not require others to eat the same thing I do

I plan on moving to Denver, Colorado somewhat soon with intentions to enjoy its amazing outdoors, train in the culinary arts for vegetarians, vegans, and carnivores, while focusing on nouvelle & molecular gastronomy cuisines, with the ultimate goal of opening a restaurant that presents thought-provoking dishes to each of these 3 diet choices artistically, and offering it in 3 ways - Dine-in, Take Home, and Trail, with specific menu items for each; all while showcasing local ingredients and talent whenever possible.
