I hope to share my favorite meals with the rest of the world. So a decent meal will always be close to home.

Last year, I harvested some home grown garden veggies that created seven jars full of what I like to call "Aztec Gold Salsa."

This year in addition to all of the tomatoes and jalopeno peppers, being grown in my home garden are zucchini eggplant, watermelon and avacado.

Eggplant, sliced julienne (sushi-like-strips) cooked in olive oil, then placed over rice or cellophane noodles has excellent nutritional value.

Fire it up and add some Aztec Gold Salsa to the mix and you have "Eggplant Masala."

It is my belief that this meal has magical healing powers. The olive oil is rich in heart healthy omega 3 and vitamin E. The eggplant is rich in phytosterol compounds, a nutrient that chemically reacts by surrounding a harmful cell, forcing it to self destruct and giving off a signal to other invaders to surrender and implode.

I call it my favorite meal not because it is the best tasting, or the most filling. It's sole purpose is to heal the sick. It does an excellent job of curing illness. That is why it is my most favorite meal of all time.
